Oatmeal Cakes

Ingredients:

  • 175g Oats
  • 3 ripe bananas
  • 1 egg
  • 1 tbsp honey
  • 1/2 tsp baking powder
  • 3 tbsp almond butter
  • 1 punnet of frozen blueberries
  • Pinch of salt

Method:

1. Preheat oven to 180 degrees
2. Puree the bananas together in a mixing bowl, until a thick paste. Fold in the oats, baking powder, honey and nut butter and mix well. Beat the egg separately in a small bowl then add to the oats and finally fold in the berries. Salt to taste.
3. Line a baking tray with some grease-proof paper. Using a tablespoon, spoon a little mixture onto the tray and spread out to a cookie shape.
4. Bake for 15-20 minutes or until golden
