• 6 slices country bread 
  • 3 San marzano tomatoes, (or other good quality) 
  • 3 Tbsp Olive oil 
  • 1 garlic clove (optional) 
  • Salt and pepper to taste


  1. Toast of your bread.
  2. Grate your tomatoes, discarding the skins once grated.
  3. Stir through 2 tbsp olive oil and season to taste.
  4. Rub your garlic clove over the hot toast before topping with the tomato.
  5. Finish with a little more olive oil and enjoy your tapas.
