- 6 slices country bread
- 3 San marzano tomatoes, (or other good quality)
- 3 Tbsp Olive oil
- 1 garlic clove (optional)
- Salt and pepper to taste
- Toast of your bread.
- Grate your tomatoes, discarding the skins once grated.
- Stir through 2 tbsp olive oil and season to taste.
- Rub your garlic clove over the hot toast before topping with the tomato.
- Finish with a little more olive oil and enjoy your tapas.
