- Fresh or store bought pasta
- Mussels
- 2 garlic cloves
- 1 red chilli
- Cherry tomatoes
- Parley
- Olive oil
- White Wine
- Chop your chillies (removing the seeds if you like), crush two cloves of garlic into a paste and add them to a pot on low – medium heat with a good dash of olive oil.
- Add your mussels and some white wine to the pot and then place on the lid so the mussels steam.
- Cook your pasta.
- Add tomatoes and some chopped parsley to the pot once the mussels have started to open. You add some extra chilli here too if you’d like.
- Remove the mussels from the pot but replace them with your cooked pasta and give it a toss.
- Time to plate! Twirl your pasta onto the plate, top with some of the sauce and then decorate with the mussels.
