Pasta ala Cozze

Ingredients:

  • Fresh or store bought pasta
  • Mussels
  • 2 garlic cloves
  • 1 red chilli
  • Cherry tomatoes
  • Parley
  • Olive oil
  • White Wine

Method:

  1. Chop your chillies (removing the seeds if you like), crush two cloves of garlic into a paste and add them to a pot on low – medium heat with a good dash of olive oil.
  2. Add your mussels and some white wine to the pot and then place on the lid so the mussels steam.
  3. Cook your pasta. 
  4. Add tomatoes and some chopped parsley to the pot once the mussels have started to open. You add some extra chilli here too if you’d like.
  5. Remove the mussels from the pot but replace them with your cooked pasta and give it a toss.
  6. Time to plate! Twirl your pasta onto the plate, top with some of the sauce and then decorate with the mussels.
  7. Bon Appetite.
