Peach Cobbler

Ingredients:

Dough

  • 2 x cups flour
  • ¼ cup white sugar
  • 1tbsp baking powder
  • 1 egg
  • 100g butter
  • 2/3 cup cream

Filling

  • 10x peaches pitted and sliced
  • ¼ cup corn flour
  • 2 tbsp soft brown sugar
  • ½ tsp cinnamon

Method:

  1. Toss all the peaches, corn flour, sugar and cinnamon in to a bowl and ensure the ingredients are well mixed. Line a baking tray with butter. Place into a baking dish
  2. Combine the dough dry mixture with the butter until a crumb like texture forms, then cream and eggs.
  3. Mix pat out and cut rounds and place on top of the peaches to cover.
  4. Sprinkle with caster sugar and bake for 45 minutes
  5. Serve with ice cream and cream
