Peach CobblerBen O'Donoghue
- 2 x cups flour
- ¼ cup white sugar
- 1tbsp baking powder
- 1 egg
- 100g butter
- 2/3 cup cream
- 10x peaches pitted and sliced
- ¼ cup corn flour
- 2 tbsp soft brown sugar
- ½ tsp cinnamon
- Toss all the peaches, corn flour, sugar and cinnamon in to a bowl and ensure the ingredients are well mixed. Line a baking tray with butter. Place into a baking dish
- Combine the dough dry mixture with the butter until a crumb like texture forms, then cream and eggs.
- Mix pat out and cut rounds and place on top of the peaches to cover.
- Sprinkle with caster sugar and bake for 45 minutes
- Serve with ice cream and cream
