Perfect Scrambled Eggs


  • 3 Whole Eggs, (room temperature) 
  • 75ml Cream
  • 25g Butter, unsalted 
  • 75g Persian Feta
  • 1tsp Chives, finely chopped 
  • 1 Slice sourdough, toasted 


  1. Over a low heat pan add your butter and melt it slowly. 
  2. Whisk up your eggs, adding your cream, chives and seasoning with salt and pepper. Make sure they are nice and fluffy before adding them to your pan. Once it starts to cook slowly move in your egg mix from the centre to create your ribbons. From this stage, the process will be super quick under 30 seconds so make sure all your other elements are ready to go before starting to cook the egg.
  3. Turn out on top of your toast and top with your feta and serve.
