Scones
Joel FerrenIngredients:
- 1 cup Ensure vanilla powder
- 2 1⁄2 cups self-raising flour
- 1 cup full cream milk
- 1 cup Greek yoghurt
- 40g butter, chopped
Method:
- Preheat oven to 200°C
- Sift flour and Ensure powder into a bowl. Rub in butter with fingertips. Make a well in the centre of the mixture and pour milk into well. Gently stir until well formed.
- Add Greek yoghurt and mix well.
- Remove dough onto a lightly floured surface and knead gently until smooth.
- Press dough into a 2cm-thick mound. Use a 5cm cookie cutter to cut out scones. Repeat until all dough has been cut. Place scones on baking tray lightly dusted with flour.
- Bake for 15 minutes or until lightly golden-brown
- Serve with jam and whipped cream
