Smacked Cucumber Salad

  • 500g cucumbers 
  • 3 garlic cloves, microplanes
  • 4 tbs Chinese black vinegar 
  • 4 tbs tamari 
  • 1 tsp sugar or honey 
  • Salt
  • Sesame oil, to taste  
  • Crispy chilli oil, to serve
  • Sesame seeds, to serve 


  1. Wash and peel the cucumbers in a zebra pattern.  Cut the cucumbers legngthways, into sticks, then remove all the seeds.  Then, smack the cucumbers with a rolling pin.  Rough;y chop the cucumbers
  2. Make the dressing and toss through the cucumbers.
