Smokey Chorizo and Capsicum Pasta

Ingredients:

  • 250g casarecce, cavatelli, orecchiette or gemelli pasta
  • 1 tbsp EVOO
  • 1 capsicum thinly sliced
  • 3 anchovies
  • 2 garlic cloves finely chopped
  • 2 fresh chorizo sausages peeled and cut into chunks (250g)
  • 1 can of tin diced tomatoes
  • 1⁄2 a cup of packed basil

To Serve:

  • 1⁄2 a cup of shaved parmesan
  • 2 sprigs of basil

Method:

  1. Cook pasta in salted water until al dente and drain reserving liquid
  2. In a deep pan add EVoo add capsicums and anchovies and cook for 3-5 minutes
  3. Add garlic and cook for 1 minute stirring
  4. Add sausage and cook for 3-5 minutes
  5. Add tomatoes and a ladle of cooking liquid and cook for 2 minutes
  6. Add the basil and cook for 1 minute stirring
  7. Season with salt and pepper
