Smokey Chorizo and Capsicum PastaKhanh Ong
- 250g casarecce, cavatelli, orecchiette or gemelli pasta
- 1 tbsp EVOO
- 1 capsicum thinly sliced
- 3 anchovies
- 2 garlic cloves finely chopped
- 2 fresh chorizo sausages peeled and cut into chunks (250g)
- 1 can of tin diced tomatoes
- 1⁄2 a cup of packed basil
- 1⁄2 a cup of shaved parmesan
- 2 sprigs of basil
- Cook pasta in salted water until al dente and drain reserving liquid
- In a deep pan add EVoo add capsicums and anchovies and cook for 3-5 minutes
- Add garlic and cook for 1 minute stirring
- Add sausage and cook for 3-5 minutes
- Add tomatoes and a ladle of cooking liquid and cook for 2 minutes
- Add the basil and cook for 1 minute stirring
- Season with salt and pepper
