Tandoori Chicken Brioche Buns

Khanh Ong

Ingredients:

  • 2 skinless chicken thighs cut in half
  • 1 tsp grated ginger
  • 1 minced clove of garlic
  • 2 tbsp of greek yoghurt
  • Zest of half a lemon
  • Pinch of chili flakes
  • 1⁄2 tsp paprika
  • 1⁄2 tsp ground coriander
  • 1⁄2 tsp ground cumin
  • A pinch of white pepper
  • A pinch of salt

To Serve:

  • 2 brioche buns
  • Cucumber julienned
  • Shredded red cabbage
  • Mint coriander

Method:

  1. In a mixing bowl mix all the ingredients
  2. Marinade for 1 hour then grill over the coals for 2-4 minutes each side
