Zucchini and Goats Curd SaladBen O'Donoghue
- 3x Green Zucchinis
- 3x Squashes
- 100g goats curd
- 50g aged goats cheese
- 50g goats feta
- 1x lemon, juice
- 50g almonds, soaked and chopped
- 1 tbsp Basil
- 1 tbsp parsley
- 1 tbsp mint
- 1 tbsp dill
- 1 green chilli, julienned
- Slice vegetables on mandelin and dress with lemon juice and salt
- Roughly chop herbs and add
- Spread goats cheese curd on the bottom of the serving plate, top with olive oil then start building the salad on top
- Crumble the feta on top, layer with more herbs and salad then top with chilli, almonds and grated aged goats cheese
