Zucchini and Goats Curd Salad

Ingredients:

  • 3x Green Zucchinis
  • 3x Squashes
  • 100g goats curd
  • 50g aged goats cheese
  • 50g goats feta
  • 1x lemon, juice
  • 50g almonds, soaked and chopped
  • 1 tbsp Basil
  • 1 tbsp parsley
  • 1 tbsp mint
  • 1 tbsp dill
  • 1 green chilli, julienned

Method:

  1. Slice vegetables on mandelin and dress with lemon juice and salt
  2. Roughly chop herbs and add
  3. Spread goats cheese curd on the bottom of the serving plate, top with olive oil then start building the salad on top
  4. Crumble the feta on top, layer with more herbs and salad then top with chilli, almonds and grated aged goats cheese
