Alcoholic Kombucha Poached Pears with Chocolate Soil

Poach Pears
- 3 pears peeled and cored
- 250ml Alcoholic Kombucha
- 1 Cinnamon
- 1 Orange, juice and strips zested
- 1 star anise
- a pinch of salt
Chocolate Soil
- 160g sugar
- 50 ml water
- 70g dark chocolate finely chopped
- 50g crushed walnuts
- a pinch of salt
Method:
Poach Pears
- Place all the ingredients into a small pot and bring to a simmer for 20-25 mins until pears are soft.
- Remove pears and set aside.
- Strain liquid and place back onto heat until reduced by 2/3rds
Chocolate Soil
- In a non reactive pan bring the sugar and water to 135C
- Add the chocolate in and whisk vigorously
- Add walnuts and salt
To Serve:
- Vanilla bean ice-cream
