Ingredients
- 1 sirloin steak 250g
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tbsp fresh rosemary or thyme chopped (optional)
- Salt and freshly ground black pepper to taste
- 1 tsp paprika optional, for smokiness
- 4 large potatoes
- Olive Oil
- 1 large knob of butter
Instructions
- Preheat the oven to 220°c. Cut the potatoes into thin strips or wedges, about 1/4 to 1/2 inch thick. Coat the fries in olive oil and salt, and assemble on an oven tray lined with baking paper and cook for about 30 minutes.
- Meanwhile, season the steak generously with salt, pepper, and paprika. Heat olive oil in a large skillet or grill pan over high heat until very hot.
- Add the steak and cook to your desired level of doneness. Add a knob of butter and a sprig of rosemary midway through cooking.
- Once cooked, remove the steak from the pan and let it rest for about 5 minutes to allow the juices to redistribute.
- Slice the steak against the grain and serve with the crispy fries. Optionally, garnish with fresh salt and pepper to taste. Enjoy your hearty, delicious steak frites!
