Chocolate Zucchini Loaf
Simone AustinIngredients:
- 9 scoops Ensure chocolate powder
- 90g butter
- 1 teaspoon grated lemon rind
- 1 cup castor sugar
- 2 eggs
- 1 ¼ cups self raising flour
- 1 Tbsp cocoa
- ½ teaspoon ground cinnamon
- ¼ cup milk
- 1 cup grated zucchini
- ½ cup chopped raw almonds
Method:
- Grease a 15cm x 25cm loaf pan, line base with paper, grease paper
- Cream butter, lemon rind and sugar in a small bowl with an electric mixer until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Transfer to a large bowl.
Stir in sifted dry ingredients, milk, zucchini, lemon rind and almonds. - Spread into prepared pan.
- Bake in moderate oven for about 40minutes.
- Stand for 3 minutes before turning on to a wire rack to cool
