Choc Raspberry Muffins

Ingredients:

Makes 12

  • 1 cup chocolate Ensure powder
  • 1¾ cups all-purpose flour
  • ½ cup white sugar
  • 1 cup raspberries
  • ½ cup cocoa powder (unsweetened)
  • 1 tsp. baking powder
  • 1 egg
  • 1 cup natural yoghurt
  • ¾ cup milk
  • ¼ cup vegetable oil

Method:

  1. Preheat oven to 160° C
  2. Grease 12 muffin cups
  3. Combine Ensure powder, flour, sugar, cocoa powder, and baking powder in a large bowl
  4. Whisk egg, yogurt, milk, and oil in another bowl until smooth; pour into the chocolate mixture and stir until batter is just blended.
  5. Gently fold through raspberries and fill prepared muffin cups 3/4 full
  6. Bake in the oven for 20 minutes.
  7. Remove from tray and allow to cool on wire rack
