Chocolate Mousse

Ingredients:

  • 150g milk chocolate
  • 25g butter
  • 1⁄2 cup Chocolate Ensure
  • 3 eggs, separated, at room temperature
  • 1 tsp vanilla extract
  • 300ml thickened cream

Method:

  1. Melt the chocolate and butter in a heatproof bowl over a saucepan of simmering water, stirring regularly. Set aside to cool for 5 minutes.
  2. Add egg yolks and vanilla extract to chocolate mixture and gently combine.
  3. Use an electric beater to beat cream.
  4. Gently fold the cream and the chocolate mixture until it’s combined.
  5. Use an electric beater to beat the egg whites until soft peaks form.
  6. Fold the egg white into the chocolate mixture followed by the Ensure powder.
  7. Place in fridge for 3-4 hours or until set.
  8. Serve with mixed berries
