Chocolate Zucchini Loaf

Ingredients:

9 scoops Ensure chocolate powder
90g butter
1 teaspoon grated lemon rind
1 cup castor sugar
2 eggs
1 ¼ cups self raising flour
1 Tbsp cocoa
½ teaspoon ground cinnamon
¼ cup milk
1 cup grated zucchini
½ cup chopped raw almonds

Method:

Grease a 15cm x 25cm loaf pan, line base with paper, grease paper
Cream butter, lemon rind and sugar in a small bowl with an electric mixer until light and fluffy.
Add eggs one at a time, beating well after each addition.
Transfer to a large bowl.
Stir in sifted dry ingredients, milk, zucchini, lemon rind and almonds.
Spread into prepared pan.
Bake in moderate oven for about 40minutes.
Stand for 3 minutes before turning on to a wire rack to cool
