Chocolate Zucchini Loaf

Ingredients:

  • 9 scoops Ensure chocolate powder
  • 90g butter
  • 1 teaspoon grated lemon rind
  • 1 cup castor sugar
  • 2 eggs
  • 1 ¼ cups self raising flour
  • 1 Tbsp cocoa
  • ½ teaspoon ground cinnamon
  • ¼ cup milk
  • 1 cup grated zucchini
  • ½ cup chopped raw almonds

Method:

  1. Grease a 15cm x 25cm loaf pan, line base with paper, grease paper
  2. Cream butter, lemon rind and sugar in a small bowl with an electric mixer until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Transfer to a large bowl.
    Stir in sifted dry ingredients, milk, zucchini, lemon rind and almonds.
  5. Spread into prepared pan.
  6. Bake in moderate oven for about 40minutes.
  7. Stand for 3 minutes before turning on to a wire rack to cool
