n a mixing bowl, combine your egg, the tinned corn, ½ a shallot, sour cream and flour together, forming your fritter mixture.
Put a pan on medium high heat with some olive oil and then scoop in your fritter mixture and slightly flatten. Flipping once golden brown.
For the Smashed avo, place 2 avos, chopped spring onions, 1 diced red chill, a splash of olive, pinch of salt and a squeeze of lime in a mixing bowl and bring it together with a fork.
Once the fritters are golden brown on both sides, place them on your plate, top with the smashed avo, extra sour cream (optional) and coriander. For an extra garnish, top with remaining chili & spring onions.
Ready to serve.
