Plum & Granola CrumbleMike Reid

- 1kg ripe plums
- 50g caster sugar
- 1 star anise
- 2 cloves
- 1 cinnamon stick
- 1 orange, juiced and zested
- 300g nut crumble
- Over a medium heat place the plums, sugar, orange and spices in a pan with a lid. Cook over a high heat for about 4 minutes.
- Reduce the heat and simmer until the plums are soft to touch but you don’t want them to lose their shape or structure. Discard, your star anise, cloves and cinnamon.
- Place in individual serving bowls and top with your granola.
