Shredded Broccoli & Roast Chicken Salad

Ingredients:

  • 1 medium head of broccoli
  • 1 lemon juiced
  • 80g of cooked buckwheat
  • 1 very ripe avocado
  • 100g pistachio chopped
  • 1 long red chili
  • 1⁄2 a roast chicken meat picked
  • 50g goats cheese crumbed
  • a pinch of salt

Method:

  1. Shred the broccoli florets in a large bowl and douse with lemon juice
  2. Throw in buckwheat, avocado diced, pistachio, sliced red chili, chopped chicken meat, goats cheese and salt. Toss well and serve
