- 1 medium head of broccoli
- 1 lemon juiced
- 80g of cooked buckwheat
- 1 very ripe avocado
- 100g pistachio chopped
- 1 long red chili
- 1⁄2 a roast chicken meat picked
- 50g goats cheese crumbed
- a pinch of salt
- Shred the broccoli florets in a large bowl and douse with lemon juice
- Throw in buckwheat, avocado diced, pistachio, sliced red chili, chopped chicken meat, goats cheese and salt. Toss well and serve
