Spinach and White Bean Dip

Ingredients:

  • ½ cup Glucerna powder
  • 120g fresh spinach, washed and dried
  • 400g white beans, rinsed and drained
  • 100g feta cheese
  • 1 garlic clove
  • Zest from 1 lemon
  • Juice from 1 lemon
  • 2 tbsp. extra virgin olive oil
  • Salt and pepper to taste.

Method:

  1. Add all the ingredients to a blender and blitz until well combined.
  2. Season as needed.

Serve with grainy crackers or cut up vegetables.
