Spinach and White Bean DipJoel Feren
- ½ cup Glucerna powder
- 120g fresh spinach, washed and dried
- 400g white beans, rinsed and drained
- 100g feta cheese
- 1 garlic clove
- Zest from 1 lemon
- Juice from 1 lemon
- 2 tbsp. extra virgin olive oil
- Salt and pepper to taste.
- Add all the ingredients to a blender and blitz until well combined.
- Season as needed.
Serve with grainy crackers or cut up vegetables.
