- 800g king George whiting fillets
- 1/4 cup parsley, chopped
- 1 long red chilli, seeded & chopped fine
- 1 heaped tablespoon of capers, chopped fine
- 8 Sicilian olives, pitted & chopped
- 1 heaped teaspoon of lemon rind
- 1/2 cup bread crumbs
- Large lemon leaves
- Toothpicks or cooking string
- Salt and pepper
- Juice of 1 lemon
- Nativa or caster sugar
- Toast bread crumbs in a pan with salt and pepper. Add olives, capers & parsley.
- Turn heat off, add lemon rind, chilli, salt and pepper.
- Fill fish fillets with some bread crumb stuffing & secure with toothpicks.
- Fry in a skittle, fry pan or bbq with a little olive oil until cooked.
- When ready, serve with lemon juice mixed with olive oil, salt, and a little sugar poured over the fish.
- Serve with a Radicchio, fennel & orange salad.
