Zia’s KGW Wrapped In Lemon Leaves

  • 800g king George whiting fillets
  • 1/4 cup parsley, chopped
  • 1 long red chilli, seeded & chopped fine
  • 1 heaped tablespoon of capers, chopped fine
  • 8 Sicilian olives, pitted & chopped
  • 1 heaped teaspoon of lemon rind
  • 1/2 cup bread crumbs
  • Large lemon leaves
  • Toothpicks or cooking string
  • Salt and pepper
  • Juice of 1 lemon
  • Nativa or caster sugar


  1. Toast bread crumbs in a pan with salt and pepper. Add olives, capers & parsley.
  2. Turn heat off, add lemon rind, chilli, salt and pepper.
  3. Fill fish fillets with some bread crumb stuffing & secure with toothpicks.
  4. Fry in a skittle, fry pan or bbq with a little olive oil until cooked.
  5. When ready, serve with lemon juice mixed with olive oil, salt, and a little sugar poured over the fish.
  6. Serve with a Radicchio, fennel & orange salad.
