Aged Kingfish with Spring Onion Sauce
- 200g Aged King Fish
- A handful of mint, coriander, spring onion and red chilli to garnish
- For Spring onion Sauce
- 140ml Early harvest oil
- 25ml Light Soy Sauce
- 50g Ginger, chopped finely
- 10ml Sherry Vinegar
- 1 Bunch Spring onions
- Combine all the ingredients together and season to taste.
- Pan fry your fish and dress with the sauce.
