Aged Kingfish with Spring Onion Sauce


  • 200g Aged King Fish
  • A handful of mint, coriander, spring onion and red chilli to garnish
  • For Spring onion Sauce
  • 140ml Early harvest oil
  • 25ml Light Soy Sauce
  • 50g Ginger, chopped finely
  • 10ml Sherry Vinegar
  • 1 Bunch Spring onions


  1. Combine all the ingredients together and season to taste.
  2. Pan fry your fish and dress with the sauce.
