Peanut Dipping Sauce

Ingredients:

  • 2 Tbsp Vegetable oil
  • 4 cloves garlic, finely chopped
  • 2 Tbsp chilli flakes
  • 1 cup spicy tomato salsa
  • 1/2 cup crunchy peanut butter
  • 3 Tbsp Ketcup Manis (ABC sauce)
  • Juice of 1 lime
  • 1 tbsp white sugar
  • Salt

Method:

  1. Place a small saucepan on a medium heat and add the oil, garlic and chilli flakes. Fry off for about a minute.
  2. Add the remaining ingredients, reduce heat to low and simmer, stirring occasionally for approximately 10 minutes.
  3. Adjust seasoning to taste. Serve at room temperature with rice paper rolls or meat skewers.
