Peanut Dipping SauceMatt Sinclair
- 2 Tbsp Vegetable oil
- 4 cloves garlic, finely chopped
- 2 Tbsp chilli flakes
- 1 cup spicy tomato salsa
- 1/2 cup crunchy peanut butter
- 3 Tbsp Ketcup Manis (ABC sauce)
- Juice of 1 lime
- 1 tbsp white sugar
- Place a small saucepan on a medium heat and add the oil, garlic and chilli flakes. Fry off for about a minute.
- Add the remaining ingredients, reduce heat to low and simmer, stirring occasionally for approximately 10 minutes.
- Adjust seasoning to taste. Serve at room temperature with rice paper rolls or meat skewers.
