Spiced Chargrilled Chicken, Flatbreads & Pomegranate Herb Salad


  • 1 x free range whole butterflied chicken
  • 1 tbs smoked paprika
  • 1 tsp nigella seeds
  • 1 tsp fennel seeds
  • 1 tsp chilli flake
  • 4 x flat breads 
  • 1 bunch mint
  • 1 bunch coriander
  • 1 bunch dill
  • 1 bunch parsley 
  • 1 pomegranate 
  • 1 cup greek yoghurt
  • 1clove garlic
  • 1 lemon, zest and juice
  • Olive oil
  • 2 lemons 
  • Salt 
  • Pepper


  1. Coat the chicken in the spices and seat with salt, black pepper and extra virgin olive oil.
  2. Place the chicken onto your grill side of your preheated bbq and cook skin down until charred and the skin is super golden.
  3. Flip the chicken and cook until fully cooked through – you can also finish the chicken in the oven.
  4. Pick all the herbs and drress with olive oil, lemon juice and salt.
  5. Combine yoghurt, garlic and lemon together and set aside.
  6. Carve the chicken and serve Wirth the flatbreads, pomegranate, yoghurt and herbs – get your guests involved by tearing the flatbreads and filling them like a kebab.
