Ingredients
- 130 g runny honey
- 40 g coconut oil
- Finely grated zest of 1 orange
- Pinch of ground cinnamon
- 1 ½ cups nuts macadamias, hazelnuts, cashews, and walnuts
- ½ cup seeds pepitas, sunflower, and flaxseed
- Pinch of salt flakes
Equipment Used
Instructions
- Preheat the oven to 170°C (150°C fan-forced). Grease a 15cm square cake pan and line the base and sides with baking paper.
- Place the coconut oil, honey, orange zest, and cinnamon into a small saucepan over medium heat. Stir and bring to a simmer.
- In a medium bowl, mix the nuts and seeds with a pinch of salt. Pour the simmering honey mixture over the dry ingredients, stirring to ensure every piece is evenly coated.
- Transfer the mixture to the prepared pan, pressing it down firmly to create a compact layer. Bake for 35-40 minutes, or until the nuts are golden and the honey has slightly thickened.
- Remove from the oven and let it cool in the pan for 30 minutes. Then, place in the fridge to chill for another 30 minutes until fully set. Once firm, slice into bars of your desired size and enjoy.
