Onion Dip
Elena DugganIngredients:
- 2 onions, finely sliced
- 50g Dried onion flakes
- 25g Dried chives, flakes
- 50g Butter
- 25g EVOO
- 15g Vegetable or chicken stock powder
- 20g Stevia
- 150g Water
- White pepper to taste
- 250g Cream cheese
- 10-25g Fresh chives, to serve
- 100g Sour cream, optional for a looser texture
Method:
- In a medium non-stick fry pan, melt butter and oil and fry onions, stevia, onion and chive flakes and stock powder. Once onions are starting to stir translucent, add water to hydrate stock and dried ingredients. Simmer on low while stirring occasionally until almost all liquid has evaporated. Season to taste.
- Allow onion mix to cool completely.
- In a food processor, blitz onion mix until a rough dice is formed. Add cream cheese and blitz until thoroughly combined but some difference in texture remains.
- Top with chives, and serve with vegetable sticks or crackers of your choice
Notes
- Loosen texture with sour cream if desired.
